A Virtual Private Server (VPS) is one type of Virtual Server. It has its own operating system, applications and data which are all isolated from all other data that resides on the physical server. VPS is a seperate part of the physical server with pre configured settings (CPU, RAM, Disk Space, Bandwidth) which you can use.
The main factors which can overload a server are Control Panel usage, Emails, FTP, Traffic, MySQL, File downloads, Website content (Static or Dynamic).
If you host on the server mostly static html sites which use minimum resources then you can have hundred of these websites on the system. On the other hand a forum or an online magazine with high traffic is possible to require great resources from the server and it would be best to host it on the VPS without any other websites.
In general you should check the server regularly, don't over load it with websites and if needed upgrade it.
